Coconut Flour: By Livestrong

Gluten Free
Gluten is a protein molecule found in certain grains, such as wheat, barley and rye. Gluten is highly allergenic, and even potentially deadly to those who have celiac disease, which is a condition where the gluten destroys the intestinal celiac. However, even if you don't have celiac disease, you can still be negatively affected by the gluten protein. The National Institutes of Health report that exposure to gluten, especially wheat flour, can cause an inflammatory response in the body, even in healthy individuals. Simply breathing in flour dust is found to cause inflammation of the lungs. Inflammation in the body can cause arthritis and even organ damage. This is why coconut flour is so beneficial. It is gluten free, and does not trigger an inflammatory response within the body. It can be used in baking and cooking your favorite desserts and sauces.

High in Fiber
Coconut flour contains almost double the amount of fiber found in wheat bran. Fiber has numerous health benefits, from reducing the absorption of sugar into the blood stream, to lowering cholesterol. In fact, according to a study published in the December 2006 issue of "Innovative Food Science & Emerging Technologies," adding coconut flour to your food intake can significantly reduce your cholesterol levels. It can also reduce your risk of developing heart disease, diabetes and certain types of cancer. Naturopathic Doctor, Bruce Fife, explains that the recommended fiber intake is between 20 to 35 g per day, with very few people even coming close to that amount. He suggests that you add coconut to your daily routine in the amount of a few tablespoons per day. Adding it to your gravies, casseroles, baked goods, or even a dab to a smoothie will significantly raise your fiber intake.

High in Protein

Although coconut flour does not contain the gluten protein, it still has significant protein content. A report from the Coconut Research Center states that coconut flour contains more protein per serving than the other leading flours, such as white, rye or cornmeal. It contains just as much protein as wheat flour, even though it doesn't contain the gluten protein.

Coconut Oil: Article on Dr. OZ

Dr. Oz Video - Coconut Oil Miracle Fat

Coconut Oil is Dr. Oz's Favorite Super Food

Conventional thought used to consider fats like coconut oil to be unhealthy and contribute to heart disease. We now know that this isn’t true. In fact, coconut oil is actually a heart-healthy food that can keep your body running smoother in a few different ways.

What are the health benefits of coconut oil?
Studies have show that intake of coconut oil can help our bodies mount resistance to both viruses and bacteria that can cause illness. Even more, it also can help to fight off yeast, fungus and candida.

Coconut oil can also positively affect our hormones for thyroid and blood-sugar control. People who take coconut oil also tend to have improvements in how they handle blood sugar since coconut can help improve insulin use within the body. Coconut oil can boost thyroid function helping to increase metabolism, energy and endurance. It increases digestion and helps to absorb fat-soluble vitamins.

Can coconut oil reduce cholesterol?
Coconut oil has a saturated fat called lauric acid, a type of MCT. It has been shown that lauric acid increases the good HDL cholesterol in the blood to help improve cholesterol ratio levels.  Coconut oil lowers cholesterol by promoting its conversion to pregnenolone, a molecule that is a precursor to many of the hormones our bodies need. Coconut can help restore normal thyroid function. When the thyroid does not function optimally, it can contribute to higher levels of bad cholesterol.

How does coconut help keep weight balanced?
Coconut fats have special fats called medium chain triglycerides (MCTs). It has been shown that breaking down these types of healthy fats in the liver leads to efficient burning of energy. One 2009 study found that women who consumed 30 milliliters (about 2 tablespoons) of coconut oil daily for 12 weeks not only did not gain more weight, but actually had lowered amounts of abdominal fat, a type of fat that is difficult to lose, and contributes to more heart problems.
